Atta Chicken Recipe
24 Hours slow cooked dough wrapped chicken Carved table side
Ingredients Unit Quantity
Whole chicken 1 no ( 900gm)
Ginger & Garlic pst 50 gm.
Salt to taste
Red chili pwd 50 gm.
Refined oil 20 ml
1st Marination
Process:
Clean the whole chicken and put three slits on the each breast and two slits on the leg parts
Take all the above ingredients and marinate the whole chicken and keep aside for 1 hour

Lemon juice 20 ml
Ginger & Garlic 50 gm.
Yogurt 200 gm.
Hung curd 100 gm.
Mustered oil 30 ml
Garam masala pwd 5 gm.
Roasted cumin pwd 5 gm.
Kasoori Methi pwd 5 gm.
Black salt 5 gm.
2nd Marination
Process:
Make a marination with the above ingredients
Dry roast the all ingredients in the red color and crush them all together and add to marination
Apply this marination to the chicken and keep it for 1 hour.
Then cook chicken in Tandoor or in oven till it 60% done.
Cool down the chicken.
Ingredients Unit Quantity
20) Coriander green 100 gm.
Chilli green 10 gm.
Mint leaf 5 gm.
Garlic whole 10 gm.
Ginger whole 5 gm.
Coriander  seeds 10 gm.
Cumin seed 5 gm.
Black pepper whole 3 gm.
Chilli flakes 2 gm.
Fennel seeds 5 gm.
Butter 20 gm.
3rd Marination
Process:
Make the paste of above ingredients apart from butter, mix with melted butter
Apply this marination
And wrap the chicken with banana leaves
For covering the chicken

For dough
Ingredients Unit Quantity
Refined flour 800 gm.
Water 300 gm.
Method:
Make semi hard dough wrap the chicken which is wrapped with banana leaf
Do the curving on top of the dough if you are placing the chicken for display.
Oven roast the wrapped chicken for 15 min @ 130’c and then for 45 min. @160°c
Serve hot with slice onion and lemon wedges.
